台灣超市(愛買,JASON,city SUPER)​感想

最近在台灣這裡超市買菜,有幾點讓我開心也有幾點讓我難過。開心的是所有一般普遍超市都有賣有機蔬菜,不用跑到特別超市。難過的是,有機牧草肉(牛,豬,雞)和有機放牧雞蛋就比較難買,要上網訂購。而且普通在whole foods買的維他命藥品類也幾乎找不到。再來是逛一下零食道,沒有健康零食的選擇。都含有糖,麵粉,麥芽糖.....是比美國還糟。

​不過在Jason超市有看到raw的法國羊起士,很高興。買了2種。還有含松露的,非常濃口味。飯後享受。:)

Keto Chocolate Creamy oatmeal

- 1 bag of organic riced cauliflower

- 1 teaspoon of monk fruit

- a dash of salt

- a dash of cinnamon

- 12 grams of cacao butter (white not black)

- a scoop of chocolate collagen powder

- 2 blocks of 100% unsweetened organic chocolate

Steps:

1. melt cacao butter and chocolate in the microwave

2. mix all ingredients together

3. cool for 30 minutes

4. enjoy this thick chocolate oatmeal!

Macros: 5 net carb, 22 fat, 20 proteins

Coconut flax crunchy fat bomb

- 1 tablespoon of unsweetened shredded coconut

- 1 tablespoon of flax meal

- 1 teaspoon of monk fruit

- a dash of salt

- a dash of cinnamon

- 12 grams of cacao butter (white not black)

1. melt cacao butter in the microwave

2. mix all ingredients together

3. freeze for 30 minutes

4. enjoy this crunchy fat bomb!

Macros: 5 carb, 19 fat, 3 proteins

beef liver moroccan stew

Ingredient:

Cilantro, zucchini, garlic, red onion, cinnamon stick, Moroccan spice blend, strained tomatoes, vegetable broth, butter, spinach, sliced almonds.

Service size varies.

Steps:

1. Stir fry garlic and onions till brown in butter

2. add in tomato puree, water and vegetable broth to the pot, once boils add in zucchini and spice blend.

3. Simmer till zucchini is tender. Add in sliced beef liver and cinnamon stick. Cook till beef liver is done (5 - 10 min)

4. Before serving, top with spinach and sliced almond. Happy creative dish!

Most Nutrient food-grass fed beef liver

Run frozen beef liver with warm water for 5 min to thaw it. Soak them in milk for 2 hrs to remove the bitterness.

After 2 hrs rinse them and marinate them in your favorite oil (butter/ghee/extra virgin olive oil/organic avocado oil/lard/beef tallow...etc) salt and pepper as well.

When pan fry it do not overcook it, cook until brown both side. 

Lemon squeeze for fresh taste.

Matcha Fat Tea

- a packet or matcha powder

- a tablespoon of organic ghee

- 4 tablespoon (60g) of coconut cream (the top solid white cream)

- 15ml of Organic heavy whipping cream

- a drop of stevia to taste

- couple splash of cinnamon

- pinch of salt

- 600 ml of warm water

Blend everything together and enjoy!

Art of simple cooking

Cooking or making a meal shouldn't be too complicated.Highly palatable foods makes you want to eat more. All the baking, stewing, marinating, deep frying...they are all process to make foods taste good, doesn't matter it's healthy or nutritious.  Once in a while on special occasion is acceptable but if you make a habit, you will start to lose focus on what eating is for. If your cooking time is more than 30 minutes and ingredients are more than 10 items, please consider to simply it because healthy tastes simple.

International Sugar

Traveling, it's a special event, whether you are vacationing, business meeting, high school reunion...we celebrate with food and sweets/desserts. Sure one day of eating/trying out desserts from a different country wouldn't hurt but what is it that you want to try? Sugar in different county is called sugar. They taste the same, does the same harm to your body and re-wired your brain. What's to "try" there? Sugar in US is sugar, in Japan is sugar, in Italy is sugar. Beware of its disguises.

Okra cheesy bake

Okra is so good for you, it has lots of fiber and great for the gut. Not sure how to incorporate it or eat it? Let me show you this awesome dish.

- 2 cups of cut frozen okra

- 1 organic pasture raised egg

- 2 oz of goat cheese cumbles

- 1 oz of good culture cottage cheese 

- 30g of almond flour

- a dash of almond milk

- a table spoon of nutritional yeast (unfortified)

- salt/pepper/parsley for your liking

whisk every in a big bowl until the okra is coated. Bake at 350 degrees for 20 minutes in a large round pan. That's it, enjoy!

Do we evolve

Consider a tribe in a lost island only eating fruits for generations, do you think they have diabetes? high blood sugar? Fatty liver? Consider a tribe in middle of africa only eating meats, do you think they have high cholesterol, high blood pressure? I think human evolves and adapts. Our body knows what to do with a situation very well, and over time, it adapt to it. So a person vegan for 10 years might not do well on a keto diet, a person has been doing keto diet might not do well on a fruit diet etc...

I also think in the future people will take pills with all the micro nutrients and that's it. No actual food, some liquids. What's your guess?

Which is right?

With all the diets out there, each renowned medical doctor has their own theory and there are results! Then you start to wonder, this person lost xxx weight on vegan diet, this person lost xxx weight on atkins diet, then which one is correct? I am intrigued by this that's why I learn as much as possible, I eat whole foods and I make my own fun foods (see my cupcake recipe below). If you are wondering the same, you just have to find out yourself. See which one you like. It's a journey, don't think this one (this diet) is forever. We can embark this together and explore as well.

What do you think?

I learned about Ayurveda today, it's an ancient india healing. It has many layers of meaning and very wide range of life and living styles. One proverb says:

"When diet is wrong, medicine is of no use. When diet is correct, medicine is of no need."

I love learning new concepts everyday. What are your thoughts?

You, me, him and her

If you are on intermittent fasting and keto today, stop and think about why you are doing this. We are all different, men vs women, 19 vs 49, desk job vs labor job, single mother with 2 jobs vs prince Diana...etc. Why are you doing the diet you are doing today? 

Do it for yourself, don't be so rigid, change it, tweak it to fit your body. Do what's best for you. Like Bruce lee said, be like water, it will fit into any shape.

Eating beyond calories

Do you eat just looking a calorie standpoint? If it's zero calorie, then i can eat unlimited no? Well even though it's zero calories, what is it that you are eating? How does it trigger your brain response? How does your body react to it? How does your gut feel about it? 

For example, stevia is a natural sweetener that has no calories and is 0 glycemic index. But the brain doesn't know that, your body might be digesting it but brain thinks something sweet and nutritious is coming in, let's release dopamine and insulin to start digesting it! So, eating beyond a calorie, think what your brain is eating as well.

Low Energy vs Hunger

Are you feeling low energy or hungry? Usually when we eat we would feel energized and if we don't eat even we are not hungry we don't feel like doing things. So "eat only when you are hungry" does not apply to everyone. What's your daily activities, an 80 year grandpa would not eat the same as 22 year old fella. It really depends on how you feel and remember don't punish yourself for eating. It is a natural thing.

Your body is eating even when you are not eating

When you are in ketosis, your body is able to take fat and transform them into engery (glucose). With intermitten fasting, it forces the body to burn body fat faster since your regular gas tank is used up. So don't think you are deprived, think that your body is eating your own body fat even when you are eating real food.

Treat them like they're real

They are healthy, no sugar and high in protein, so I can eat that right? or I can eat more right? The truth is, if you don't eat the regular cookies (full of sugar) why would you eat the fake sugar cookie? I used to believe I can indulge more of those because they are "healthy" but in fact they wired your brain to sweet things more than ever. So now I treat them as the real thing which is don't eat. Really have to think of them as they are using the bad ingredients because it does the same damage to your brain.

10min cauliflower "fried" rice

Ingredient:

- 4 oz of organic diced cauliflower

- 2 organic pasture raised eggs

- a dash of himalayan salt

- a service of macadamia nuts

stem cauliflower rice till it's fluffy. scramble eggs and put on top of the rice. Add salt and roasted macadamia nuts. That's it!

Mushroom cauliflower conghee

Ingredient:

- 4 oz of organic diced cauliflower

- 4 oz of chopped crimini mushroom

- 2 cups of mushroom broth

- a dash of himalayan salt

- a dash of xantham gum for thickening

- garnish: cilantro and green onions

Stew all ingredient in a pot with lid for 15 minutes. Top of garnish. Perfect in a cold day

Thai Lemongrass chicken

Ingredient:

- 1 oz of organic chicken thighs

- 1 tablespoon of lemongrass mix

- a dash of salt for marinate

- 1 tablespoon of coconut oil for frying

- garnish: cilantro and lime

Marinate chicken in lemongrass mix for 10min, stir fry it till chicken is brown then garnish with your preference.

Vanilla Cupcake, sugar free

Ingredient:

- 1 organic pasture raised eggs

- 1 tablespoon of organic ghee coconut oil blend

- 3 cups of almond flour

- 1/2 cup of sparkling water

- 1 tablespoon of baking powder

- Himalayan pink salt

- cinnimon powder

- 5 drops of stevia

- 1 tablespoon of vanilla extract

- a dash of organic almond milk

Bake at 350 degrees for 25 minutes. Enjoy!

Simple egg quiche

Ingredient:

- 2 organic pasture raised eggs

- 1 tablespoon of organic sour cream

- 3 cups of organic frozen spinach

- 1 oz of organic grass fed raw shredded cheeze

- 1 tablespoon of nutritional yeast (unfortified)

- Himalayan pink salt

- Turmeric powder

- 1 tablespoon of organic almond flour

- a dash of organic almond milk

Bake at 350 degrees for 25 minutes. Enjoy!

Tasty Air

Have you ever enjoyed a breath of tasty air? I am not referring to a smell of your favorite food but a smell of relax, freedom and joy? Have you really had a deep breath lately? With a warm sun on your body, gentle breeze by you, a tune of your favorite podcast/audible books/music. This time is needed and you need to make time for yourself. it's called "self care". Doesn't have to be long, whatever time length you feel you are satisfied.
